Buckwheat is a plant native to Northeast Asia (Siberia, Manchuria) which, thanks to agriculture, became common throughout Europe in the 16th century. Although it has similar characteristics, it is not considered a cereal, since it does not belong to the grass family, but to the polygonaceae.

The floral tops of buckwheat are very rich in rutin, which is an ideal flavonoid to treat the fragility and permeability of blood capillaries. For this reason, it is very convenient in varicose veins, retinal hemorrhages and other circulatory problems, since it also has an anti-inflammatory function.

Its content in group B vitamins, along with its contribution of iron, are good allies against anemia. Being a food rich in oleic, linoleic, palmitic and linolenic acids, buckwheat or buckwheat helps us in the fight against cholesterol and cardiovascular diseases.

This plant stands out for its high protein content (between 10 and 13%) and its great bioavailability (it is estimated that we can assimilate 70%). At the same time, it is very rich in the amino acid lysine (which is scarce in vegetable proteins) and in other essential amino acids (arginine, methionine, threonine and valine).

Buckwheat is an energetic and nutritious food. It is not recommended to take it at night in large quantities, since although it is not exciting, it gives a lot of energy. That is why in cold weather it is ideal for maintaining body heat and is very convenient for the elderly, athletes, children and convalescents.

Another of the most important characteristics of buckwheat is that it is rich in lysine, an essential amino acid that is deficient in wheat and other cereals. Therefore, the protein of this plant is more complete than that of wheat. In addition, it is rich in vitamins B2, B3, B6, folate, magnesium, potassium, zinc, iron and phosphorus. It should be noted that it does not contain gluten, so celiacs can consume buckwheat.

Being a food rich in oleic, linoleic, palmitic and linolenic acid, buckwheat favors the fight against cholesterol and cardiovascular diseases. It is also indicated in cases of high blood pressure, arteriosclerosis, capillary fragility, tendency to hemorrhage and skin bruises.

MIMASA organic buckwheat is prepared in a similar way to MIMASA organic millet. After washing it under the tap, boil it for between 20 and 30 minutes in the following proportion: three parts of water and one part of MIMASA organic buckwheat.

Thus, it is consumed in the form of grain, which is triangular in shape, like a small pyramid. Its flavor is very intense.
