Mimasa Surikogi is the mallet used to mix and grind the ingredients inside the Mimasa Suribachi.
When the sesame seeds are pressed with the Surikogi against the grooves of the with the Suribachi, the sesame oil and aroma mix with the grains of salt. The result is a Gomasio with a texture and smell that cannot be achieved with a traditional grinder.
They can also be used to prepare al kinds of sauces.
Surikogi is used like any other mortar and pestle and is made with Magnolia obovata by Japanese craftsmen according to the tradition passed down from generation to generation.
