MIMASA suribachi, 18 cm in diameter, is a ceramic mortar with grooves of Japanese origin that, with the help of the wooden mallet called surikogi, allows you to prepare cooked cereal and vegetable purées, homemade gomasio, etc. For these operations, it is necessary to crush the food with MIMASA surikogi, giving it a rotating movement in an anti-clockwise direction and pressing against the walls of the mortar.
The use of MIMASA suribachi and surikogi is especially indicated for the elaboration of themutasio: when crushing the sesame and the salt, the oil of the first envelops the grains of salt. The result is a very different aroma and texture if the preparation is done with a grinder, with which the sesame seeds and grains of salt are simply broken, but not completely mixed.
