This Japanese Nakiri knife from the Sakon Shiraume series is the Japanese knife for cutting vegetables. The traditional one of Japanese cuisine for fine cutting and cubing. It has a 165 mm long blade, in triple-layer stainless steel, the outermost is made of SUS405, the softest stainless steel that makes sharpening easier.
They are manufactured in the city of Tosa in the Japanese prefecture of Kochi by Hokiyama, with more than 100 years of tradition in the manufacture of haute cuisine knives.
Thanks to the 3 layers and its stainless steel edge, they have made it one of the essentials for the kitchen, with a very clean and precise cut.
Molybdenum vanadium stainless steel (AUS8) gives SAKON Shiraume series blade stable edge retention and hardness up to HRC-60. AUS8 is protected by a softer stainless steel layer (SUS 405) that provides flexibility to the high carbon hard blade and acts as a shock absorber that also makes sharpening easier..
