Soy is a healthy food that, for centuries, has been a primary source of protein in the diets of Eastern cultures. Meat was almost ignored, and at most, they consumed certain amounts of fish in coastal areas. It is worth noting that soy is not usually eaten directly, but rather processed into Tamari or Soy Sauces, since it contains a purine, trypsin, which is harmful to the body but disappears during fermentation.
One of the best characteristics of soy is the wide versatility it offers in cooking, as it can be included in practically any dish. This way, its valuable nutritional properties can be combined with a great variety of flavors.
At Mimasa, you’ll find several products made from fermented soy. Discover our 3 types of Soy Sauce, 5 varieties of Miso and Protina.
Enjoy soy-based foods!
Soy contains 36% high‑quality protein (more than any other plant or animal food), as well as eight essential amino acids. Soy‑based foods are low in calories and contain no cholesterol or the saturated fats so abundant in most animal meats.
When soybeans are consumed directly, only a small portion of their proteins is assimilated. However, through natural fermentation, soybeans undergo a complete biochemical transformation, during which their complex protein, carbohydrate, and lipid (oils and fats) molecules are converted into amino acids, simple sugars, and fatty acids that are easily absorbed.
Mimasa’s healthy foods are organic products that come from their place of origin and are crafted using traditional methods, with top‑quality ingredients and without any chemical or industrial processes in their preparation.
Our online store offers a variety of healthy foods so you can incorporate your favorites into your diet, such as Umeboshi, Seaweeds, Sesame and sesame-based products , and Cereals, among others.
