Seitán casero con un toque de albahaca

Ingredientes (para 4 personas):

250gr de harina de gluten 250ml de agua mineral 3 cucharadas soperas de Tamari Mimasa 3 hojas grandes de albahaca ppicadas finas 1 trozo de alga Kombu Mimasa 1 hoja de laurel 5ml de jengibre en polvo Mimasa 1 guindilla seca (opcional) 5 cl de tamari-shoyu Mimasa

Preparación:
En un bol, mezclar el agua mineral con el Tamari Mimasa. En un cuenco grande, mezclar la harina de gluten con la albahaca picada. Verter el líquido y mezclarlo todo muy rápidamente y enérgicamente porque "cuaja" enseguida, primero con una cuchara de madera y luego con las manos. Formar 2 bolas de igual tamaño. En una olla de bordes altos, colocar el alga kombu Mimasa, la hoja de laurel, el jengibre Mimasa en polvo y la guindilla seca. Luego verter agua mineral hasta llegar a cubrir casi completamente el seitán. Tapar y dejar cocer durante 50 minutos. Dejar reposar, 10 minutos y servir.
